Jean-Charles Abbatucci's father Antoine assembled a collection of old Corsican grape varieties at risk of disappearing, and Jean-Charles, who took over in 2000, farms the estate biodynamically and now works alongside his daughter Faustine.\n\nThe Faustine cuvees were created to mark her birth and sit at the heart of the estate. The white is 100% Vermentino from old vines on granite. The grapes are pressed whole bunch or destemmed, the juice settles for 24 to 48 hours, then ferments in temperature controlled stainless steel before six months on lees. The estate describes white flowers with a touch of anise, then a delicate, gradually unfolding palate with a mineral edge.
