Tasting note
Comte Louis de Lauriston, the calvados house of Domfront in Normandy, makes its Pommeau de Normandie from three parts fresh cider apple juice to one part calvados. The appellation asks for at least 14 months in oak barrels once the blend is made; Lauriston goes much further, ageing its pommeau for three to four years so that it settles into balance with no apparent alcohol.
The apples are chosen with care too, so the finished pommeau is neither too sweet nor too heavy. Although it had been made on Normandy farms for generations, pommeau was only formally recognised in law in 1986, when a decree set out its production rules.
Style. Apple aromas, exuberant fruit and a moderate sweetness.
Serving. The house recommends it chilled to 8 to 10°C in a tulip glass. Before dinner, take it on its own, in cocktails, or lengthened with Champagne or mixed with other spirits. Normandy is too far north for wine grapes, so it distils apples instead.
