Tasting note
In Provençal, farigoule means thyme, and Farigoule de Forcalquier is the thyme liqueur of Distilleries et Domaines de Provence, who created it in 1898. It is one of the oldest recipes in their range, and it still begins in the garrigue, the wild scrubland around Forcalquier in Haute Provence.
How it is made. Wild thyme is picked by hand in May, while it is in flower, then gently dried. One part macerates for 15 days with sage, lemon verbena and angelica seed; the soaked plants are then distilled. The rest of the thyme goes through the still separately to keep the finesse of its oils. Infusion and distillates are blended, tasted and filtered before bottling.
Tasting. The nose is woody, peppery and floral. In the mouth thyme leads, with a lemony lift, a woody edge and a long aromatic finish.
Serving. The distillery recommends it neat and well chilled at the end of a meal, or poured over crushed ice as a granita. Spoon a little over lemon or thyme sorbet for a Provençal pause between courses, or mix it with gin, vodka or champagne. In the kitchen it suits grilled chicken, flambéed king prawns and a pan sauce for rabbit. Browse more in our liqueurs collection.
