Tasting note
Six years in wood, the last of them in a cask that once held red Bordeaux from the Graves, shape this Vieux Marc de Champagne from Dumangin. That final year gives it colour, a woody note and vinous, dry flavours.
The house. Dumangin is based at Chigny-les-Roses, where Gilles Dumangin is the fifth generation of the family to make wine.
What marc is. Marc de Champagne is distilled from the grapes left once the pressing for Champagne is done. Here they are de-stemmed and fermented, then distilled to 70°, and the spirit rests five years in new wooden casks before its year in the Bordeaux cask.
Using it. Pour it after dinner, or take it into the kitchen, where it is used to make fine sauces.
