Tasting note

Holyrood Distillery opened in Edinburgh in 2019, the city's first new distillery in nearly a century, and its Noir trilogy explores what wine yeasts can bring to Scotch malt. Premier Cru Yeast starts with a base of pot still malt fermented with a 60/40 mix of two wine yeasts, which gives a vibrant, fruit-forward new make spirit. It was then matured in a combination of ex-bourbon barrels, ex-Chardonnay casks and other white wine casks, chosen to lift the spirit's natural brightness and its underlying biscuity character. Holyrood describes notes of tarte tatin, toffee, buttercup and pear. Bottled at 47.2%, it is a thoughtful single malt for anyone curious about how much fermentation shapes flavour.
