Tasting note
Most rum is made from molasses. This one is made from sugar cane grown and cut on the estate and pressed for its juice, which is a different starting point and gives a drier, more mineral spirit with a grassy thread running under the wood.
Eight years in French Limousin oak takes the edge off that. The colour is light amber. The nose is soft and faintly perfumed with vanilla; the palate opens on candied bitterness, then ginger and orange peel, with caramel, liquorice and orange marmalade through the middle and a warm finish from the 43 per cent.
Neat is the honest way to drink it, in a small glass with no ice. It also makes an excellent daiquiri: sixty millilitres rum, thirty of lime juice, fifteen of sugar syrup, shaken hard and served straight up. The cane character survives the lime, where a heavier molasses rum can get lost. 750ml at 43 per cent, from Haiti.
