Tasting note
Raspberry creme made by macerating whole fruit, and it shows in the colour, a deep ruby that stains a glass of sparkling wine properly rather than turning it pink and cloudy. The aroma is fresh fruit rather than confectionery, and the palate is round with a tangy edge that keeps the sugar in check.
A kir royale is the one line recipe: fifteen millilitres in the bottom of a flute, topped with chilled sparkling wine, no garnish. Swap in a still dry white and it becomes a kir.
The better cocktail is a clover club: forty five millilitres of gin, twenty of this, twenty of lemon juice, egg white, shaken hard and then shaken again without ice. The raspberry and the lemon do the work and the foam holds the aroma.
In the kitchen it works as a coulis straight from the bottle, over sorbet, mousse or a plain vanilla panna cotta. 700ml at 20 per cent.
