Tasting note
Violet liqueur exists mostly for one drink, and that drink is the aviation. Forty five millilitres of gin, fifteen of maraschino, fifteen of lemon juice and a bar spoon of this, shaken hard and served straight up. A bar spoon and no more: violette is assertive, and too much turns the drink soapy and grey rather than pale blue.
On its own the aroma is exactly fresh violet petals, and the palate is floral and intense with a long finish. At 18 per cent it is a low strength modifier, so it dilutes a drink as well as flavouring it.
Beyond the aviation, half a bar spoon in a gin and tonic gives colour and a floral top note. It works with sparkling wine the same way a blackcurrant creme does, and it is good drizzled over a lemon sorbet or a panna cotta.
