Tasting note

Dun Cana is named after the highest peak on the Isle of Raasay, and this is the third edition of Isle of Raasay Distillery's sherry quarter cask release. The distillery, founded by Bill Dobbie and Alasdair Day, began producing spirit in 2017, and every drop is distilled, matured and bottled on the island. As with the distillery's other single malts, peated and unpeated Raasay spirit is used. It was first matured in American ex-rye whiskey casks, then finished in small quarter casks that had held Pedro Ximenez and Oloroso sherry. Bottled at 52% with natural colour and no chill filtration, it shows peppery spice, dried sultanas and hints of vanilla, finishing with lingering salty chocolate and a light hint of aromatic wood smoke. Each bottle is individually numbered.
