Tasting note

Christian Drouin's 1996 is a single-vintage Calvados Pays d'Auge, distilled in 1996 and bottled at 42%. Pays d'Auge is the most demanding of the calvados appellations: the cider must be distilled twice in a copper pot still, which gives a fuller, more complex spirit than single column distillation. This vintage was matured in seasoned calvados casks and in former Banyuls casks, the sweet fortified red wine of Roussillon. Drouin describes a copper-amber colour and an evolved nose where almond, dried apricot and beeswax mingle, followed by a full, elegant palate with silky, refined tannins. The Drouin family has made calvados at Coudray-Rabut, next to Pont-l'Eveque in the heart of the Pays d'Auge, since 1960. Serve neat at room temperature in a tulip glass.
