Tasting note
Made entirely from pears, not apples, which is the thing to know before you pour it. The pears are pressed and fermented into perry, then distilled once through a column still, and the single pass keeps more of the fruit in the spirit than a double distillation would.
The colour is light gold. The nose is fresh and unmistakably pear, with white peach behind it. The palate is lighter than the strength suggests, elegant rather than heavy, and the acidity is what carries it: it finishes clean instead of sweet.
That acidity makes it useful at the table. Serve it cold in a small glass between courses, or at room temperature after a meal with an apple or pear tart. It is also good as a long drink over ice with tonic and a strip of lemon, which is not how it is usually treated in France but works well in an Australian summer. 700ml at 40 per cent, five years old, from Domfront.
