Tasting note

Eric Bordelet was a sommelier at L'Arpege in Paris before returning in 1992 to his family's orchards at the Chateau de Hauteville in Charchigne, near the southern edge of Normandy. He set out to make cider with the precision of fine wine, and the orchards are farmed organically and biodynamically. The estate grows around 30 apple varieties across bitter, sweet and sharp types, on ancient red schist and granite. Sidre Brut Tendre is made from old, non hybrid varieties, hand harvested, gently pressed and fermented slowly with natural yeasts, and bottled with some of the fruit's natural sugar remaining, giving a fine, natural sparkle. The result is gently off dry, with fresh and baked apple, a touch of honey, noticeable tannin and bright acidity. Serve chilled as an aperitif, or with pork, cheese or apple desserts.
