Tasting note
Apple and chestnut in one glass: Le Birlou balances the orchard sweetness of apple with the softness of chestnut. It started life as a house liqueur that Henri Monier poured for customers at his shop in the Veinazès, in the Cantal. His original mix was chestnut cream and apple syrup topped with beer, which gave it its name: "Bir" for bière, "Lou" for pelou, the Massif Central word for the spiky chestnut husk. Today it is made by Vedrenne.
Tasting. The nose moves from stewed apple through cinnamon and nutmeg to roast chestnut. The entry is creamy, the palate sweet and concentrated, and the texture soft and silky with gentle warmth. A clean finish with a little acidity keeps it from cloying.
Serving. Pour it chilled before dinner, or try Vedrenne's Bir-Look-After-Me: equal parts Birlou and tequila shaken with a dash each of lemon and lime juice, strained over crushed ice. Find the rest of the Vedrenne range in our Vedrenne collection.
