Tasting note
Grande Absente is the full-strength absinthe from Distilleries et Domaines de Provence in Forcalquier, bottled at 69%. The producer describes a blend of wormwood, anise, mint and spices, with the absinthe plant firmly in charge.
Colour. Clear, bright green with yellow glints.
Nose. Camphor and menthol lead, joined by fresh anise and spice.
Palate. Powerful and absinthe-driven at first, then a structured build to a fresh, spiced finish that lingers.
How to serve it. At this strength it is made for dilution. Rest a sugar cube on an absinthe spoon over the glass and slowly pour iced water over it, and the spirit turns a cloudy, opalescent green. It also works poured over shaved ice or in small measures in cocktails. Store the bottle upright, away from heat.
