Tasting note
Authentique comes from Distillerie Les Fils d'Émile Pernot in Pontarlier, the historic home of absinthe, up in the Haut-Doubs. The distillery has been making absinthe for more than a century, from a selection of plants in which five appear in every one of its recipes.
The style. Authentique is a distilled green absinthe, young and fresh, and perhaps the most refreshing of the Pernot absinthes. Grande absinthe, the wormwood of Pontarlier, is strong and to the fore, and it knits closely with green anise and fennel, which fill the mouth and linger for a long time. In aromatic power it sits near the house's Berthe de Joux.
