Tasting note
Don Zoilo is a range of sherries from Bodegas Williams & Humbert in Jerez, and this is its Pedro Ximénez: a naturally sweet sherry aged for at least 15 years.
How it is made. The Pedro Ximénez grapes are dried in the sun, pressed, and the must is fortified to 9 degrees. After settling it is fortified a second time to 18% and then works its way through the criaderas and solera system, where it matures by slow oxidation.
Tasting. Black mahogany in the glass. The nose is classic PX, full of raisins and figs, and the palate is very sweet and persistent with low acidity.
Serving. The bodega recommends 12 to 14°C. Pour it with desserts and ice cream, dark chocolate, citrus or red fruits, or a wedge of blue cheese. More from Jerez is in our sherry collection.
