Tasting note
Dos Cortados is a palo cortado sherry from Williams & Humbert in Jerez, classified VOS (Very Old Sherry) and aged 20 years. Palo cortado is a rare in-between style that sits halfway between an amontillado and an oloroso: it has the nose of the first and the palate of the second.
Tasting. Old gold to amber. The nose is sharp, deep and layered, with hazelnut and dried fruit. Dry (under 6 g/l of sugar), with fresh acidity, full body and a long, elegant finish.
How it is made. Palomino grapes from the Jerez Superior vineyards of Pago Balbaína are fermented, fortified to 15% and laid down in fino casks in the criaderas y soleras system for biological ageing. Now and then a cask develops differently and will not become fino. Those casks are "cut" with a little more spirit, which gives the style its name, and they go on to seed the palo cortado solera, where the wine ages for 20 years.
Serve it in a small glass before a meal.
