Tasting note
Williams pear, and at 30 per cent it is stronger than most fruit cremes, which changes what you can do with it. There is enough alcohol here to carry a drink rather than just sweeten one.
The nose is fresh rather than jammy, ripe pear with a floral lift. The palate is round and silky with a citrus edge that stops it sitting heavy, and there is a distilled pear character underneath that a purely macerated liqueur does not have.
The easiest good drink is a pear tonic: forty millilitres over ice in a tall glass, topped with tonic, with a strip of lemon peel. In a spritz, use it in place of half the usual bitter and top with prosecco and soda. It also works stirred into gin at four to one with a dash of orange bitters, which is closer to a cocktail than a highball.
For dessert, pour it over a pear tart or a poached pear. 700ml at 30 per cent.
