Tasting note
Fresh grape juice stopped with brandy before it can ferment, then aged seven years in French oak. That is the whole method, and it produces something between a sweet wine and a spirit: 17 per cent, sweet but not sugary, with the acidity left intact.
The colour is straw yellow. The nose is fruit forward with a mineral edge and the first hint of the nutty rancio note that long cask ageing brings. The palate is soft and light rather than syrupy, and the balance between sweetness and acid is the reason it works before a meal rather than after.
Serve it properly cold, straight from the fridge, in a small wine glass. It is very good with pate, with a blue cheese, or with melon and prosciutto. It also mixes: fifty millilitres with tonic and a slice of orange makes an easy low strength drink.
Bottled with no added sulphur and no added sugar. 750ml at 17 per cent, seven years old.
