Tasting note
Hervé Seznec makes this Cidre de Fouesnant at Manoir du Kinkiz in Quimper, and it is a cider that finishes itself in the bottle. After a deliberately slow fermentation it builds its own sparkle naturally over roughly two and a half months, which leaves it with a fine bead.
Everything before that is done by hand. It is a traditional blend of old apple varieties from the family's own orchards in the Pays Fouesnantais, which are left under a natural grass cover rather than weeded. The apples are picked and sorted by hand, then pressed only once fully ripe, from late September through to December.
In the glass. The Manoir describes a cider with real personality: a gentle bitterness, a rounded body and lingering scents of fresh apple, fresh butter and hazelnut.
