Tasting note
Don Guido is the Pedro Ximénez Solera Especial from Bodegas Williams & Humbert in Jerez, a VOS sherry aged for a minimum average of 20 years. The grapes come from the Balbaína vineyard in the Jerez Superior zone.
From vine to solera. The Pedro Ximénez grapes are left to raisin in the sun for around 15 days before pressing. The must is fortified to 9 degrees, settled, then fortified again to 18% and sent through the criaderas and solera system, where it ages oxidatively for many years.
Tasting. Black mahogany, very dense and slightly viscous. Raisin and fig lead the nose, with balsamic notes underneath. The palate has little acidity: it is very sweet, honeyed and long.
Serving. Williams & Humbert suggests serving it at 10 to 12°C with ice cream, dark chocolate, pastries or blue cheese. Browse more bottles from Jerez in our sherry collection.
